Buffalo Hasselback Chicken

I love anything spicy! One of my favorite things ever is buffalo chicken dip, I’m also a huge fan of buffalo wings. Okay, you get it! I decided to try something new and came up with “Buffalo Hasselback Chicken” and boy did it not disappoint. I paired it with asparagus I drizzled in olive oil, sprinkled in salt and pepper and cooked at 350 for 30 minutes. It was a perfect pairing! 



  • Chicken breasts 
  • Buffalo sauce 
  • Cheddar cheese slices 
  • Blue cheese
  • Brown potatoes 



  1. Preheat oven to 350 F 
  2. Rinse and pat dry chicken breasts and trim excess fat
  3. Slice horizontally 1″ apart but not fully through chicken breasts 
  4. Peal potatoes and cut very thin slices, cut cheese slices in half
  5. Place one cheese and one potato slice in each chicken slot 
  6. Using a pastry generously cover chicken with buffalo sauce, I didn’t brush it on, I tapped it all over so I didn’t move the cheese and potatoes
  7. Bake a 350 F for about 30 minutes depending on the size of your chicken breast
  8. Lightly put blue cheese on top of chicken (I didn’t want to over do it) and return to the oven for 5 minutes
  9. Enjoy!

  2. Ok, I ve been itching to try the whole hasselback potatoes trend ever since they blew up on the blogosphere awhile back. So today I decided to whip out some hot sauce and try making some Buffalo Hasselback Potatoes!
