I recently moved from Connecticut to San Antonio, TX and i’ve been loving every minute of it! It’s so much different but in a good way, it’s the change I needed and was looking for. I’ve met some amazing people who have helped make this process so much easier and i’m forever thankful. Cooking is a way for me to relax, I love to try new things, It might not be new to anyone else but it’s new to me. I’ve been on quite the avocado kick lately, guacamole, on sandwiches, on tacos! And now, in chicken, I was surprised at how much I liked it, I didn’t know what was going to happen to the avocado in the oven, I’m not sure what I was so worried about, it came out great!
- 4 boneless chicken breasts
- 2 avocados mashed
- 1 tablespoon lime juice
- 1/4 cup fresh cilantro
- 2 tablespoons chopped onion
- dash of salt and pepper to taste
Preheat oven to 350°F. Mix Avocados, Lime juice, Cilantro, Onion, and salt and pepper in a bowl. Cut a slit into the chicken breasts lengthwise but not all the way through, cover entire breast with panko bread crumbs and stuff each with Avocado mixture. Place on lightly oiled baking dish and cook for 45 minutes, or until chicken tender. Enjoy!
